The new AIST was designed as an out-of-time project – light, airy and elegant like the bird that gave its name to the restaurant. The interior designer was Zenya Uzhegova. The unchanging AIST chef Mirko Dzago during a long reconstruction time has reviewed the menu making an emphasis on his vision of European cuisine. The renewed menu contains a great choice of fish, meat and poultry (they serve beef with foie gras and lingonberries, fritto from squids with yogurt and pickled onions), a wide choice of crudo (in Italian “fresh”), and a small portion of Asian author cuisine (rolls and poke).
