On account of restaurant Empire of Vladimir Perelman, there are eight different projects. The new seafood restaurant “Ryba moiya” was opened in February. Restaurateur with an education in music - Vladimir Perelman - told us about his future plans, the Soviet stage and shared with the editors of ANNARUSSKA the secrets of management of the holding Perelman People which includes the restaurants like “I like bar”, “Beer and Brut”, “I like grill” and others


AR: Your team is a huge family. What’s the secret of the management for such a popular project? Do you anticipate any sharp turns in the future? 

Vladimir Perelman: The secret lies in the name of the holding Perelman People. I just would put the word “people” first, but the People of Perelman doesn’t sound very good. Peoples’ trust and mutual help are those success factors which are the managerial principles of our company. We work not under duress but because we are afraid to let each other down. We have no outsourcing and in each division, we educate our own personnel – whether in the service of technical support, marketing Department or PR. As the man and his well-being for us are the core value, we will continue to develop from a position of kindness, not stepping on the heads. 

AR: Are you planning to go abroad? Maybe basing it on the example of the Ginza Project which has mastered the market you will take you own project to the railway station? 

Vladimir Perelman: We believe that a large number of restaurant projects in Moscow deserves to be presented at the international gastronomic level. I hope someday our restaurants will be able to represent the culture and traditions of Russia abroad. -

AR: Unconventional question. The older generation grew up on books by the great popularizer of science Yakov Perelman “Amusing physics”, the middle one admires and wonders about the great mathematician Grigory Perelman. And has Vladimir the desire to work for the history? 

Vladimir Perelman: Since the childhood, I have dreamed to be a singer, because I grew up in a family of classical musicians. Someday, I will try to revive the immortal hits of the classic of Soviet music, because both my grandfathers were in the ensemble of Utesov. And there, you can never tell what might happen, in Hollywood I will sing something from the repertoire of Frank Sinatra. 

AR: There are around projects of Novikov, Dellos, Rappaport, Ginza. All of them are successful and they survived more than one crisis. What do you have to offer to a new competitive market? 

Vladimir Perelman: We create intelligent designs for intelligent people and we believe in this concept. We have our own style: we don’t have projects with star designers and we skip all process through the heart. And I think the secret of our success is sincerity, the fact that priorities shifted in the direction, not of material values but the human ones. Now it’s the time of the honest towards for the guest projects: we do not have strict margins, we are well known to all Moscow, for example, this fact that we sell oysters at the lowest price, depriving ourselves of a large part of the earnings, but giving guests positive emotions. In short, we give more for the less money.
